Memories of Love-1980-1981-Written about Richard.

I feel as if it won't be long, for him to set me free. You see our time is limited, he lives so far from me. The love we've had has been quite shy except when no ones around, he'll take my hand and embrace me tight but then someone is there to be found. I feel our love is special, we don't go showing it off. It seems much like a rose in the spring, very beautiful and oh, so soft. Don't get the wrong idea my friend, we want everyone to know, that within our two hearts alone a fire of love is aglow. But I am so afraid that in a very short time, I'll never get to see him again, none of the bells will chime. The only way that I can say that he will forever be near, is to always stay right by his side in all of my lonliness and fears. But when and if the time does come and we have to say "good- bye". Our memories of the love we had, will never ever die.

My Mom's Holiday Prune Cake Recipe

No holiday for me would ever be complete without tasting my mom's prune cake. Ever since I can remember, we have always had it starting during Thanksgiving and Christmas.

I do remember one particular Christmas... all of our extended family had asked my mom to bake their prune cakes. At that time they were just becoming a novelty since she had not been making them long and everyone loved them.
She began baking many of them for our family members but as luck would have it all of the cakes that did not turn out, we got to eat!

Here it is:

1 1/2 cups sugar, 1 tsp soda ,1 tsp salt
1 cup wesson oil, 1 tsp nutmeg, 1 tsp vanilla
2 eggs, 1 tsp cinnamon, 1 cup chopped nuts
2 cups flour, 1 tsp allspice, 1 cup cooked prunes
1 cup buttermilk (put them in water to boil til soft
and drain off the water. They
will be mushy.)

Mix sugar and oil well, add eggs one at a time. Sift all dry ingredients together except the soda. Mix soda and buttermilk in a large bowl. Add sugar, oil and egg mixture and the sifted ingredients to the mixture of soda and buttermilk in the large bowl. Add the prunes and nuts and stir well. Bake @ 375 degrees till tooth pick comes out clean.

Frosting

1/4 cup butter, 1 cup sugar, 1/2 cup buttermilk
1/2 tsp soda, 1 tbsp Karo corn syrup

Add all ingredients into a small pot and put on stovetop. Heat until it comes to a boil, changes color and thickens. Pour on slightly warm cake.
